DESCRIPTION
Fixolor® PK is a cultured reddish Swiss chard, which is used to boost the red-pinkish color and flavor development and inhibit the foodborne such as Listeria and botulinum in processed meat products.

REGULATIONS
Fixolor® PK is labelled as vegetal nitrite or cultured chard, which is approved as GRAS by FDA, USA. The regulations governing the use of Fixolor® PK vary considerably in the countries in which it is currently approved. It is recommended to use it after ensuring compliance with your local regulations. 
REDDISH CHARD
Reddish chard is well known for containing high levels of nitrate (2,992 mg/kg) and has antioxidant components such as phenolic acids and flavonoids, which can be converted to nitrite using nitrate reducing starter cultures such as Staph. Xylosus, called Fixolor® PK.  
 
COOKED PORD MEAT
Treated with Fixolor® PK in cooked (cured) pork meat, the Total Viable Bacterial Count is below 100 CFU/g, the redness value is increased as a result of higher contents of nitrosoheme pigment, and a lower residual nitrite content than synthetic nitritedue to the lower pH and additional antioxidant compounds derived from the vegetable extracts, which provide reducing conditions for forming nitric oxide, led to lower residual nitrite contents.
